Prerequisites: BIOL 220, 220L and CHEM 117. Corequisite: BIOL 312. The Science of Food Laboratory is a complement to Biol 312 The Science of Food lecture. Lab exercises will focus on post harvest changes of different food components and how different ingredients and chemical compositions affect the final quality of food. Students will also study different processing steps in certain food products and analyze the critical control points. Students will formally present an HACCP analysis to the class. Laboratory 3 hours. Lab fee required. This course cannot be challenged.
